Ingredients:

1-1/8 cups sugar snap peas - hulled & blanch
3 cups sugar snap peas (in shell) - blanch
1/2 tsp white rice vinegar
1/2 cup fresh herbs (e.g., chevril, parsley, mint mixture)
1 cup water
1 tsp mirin
1 tsp balsamic vinegar
2 avocados - mash
1/2 Tbs lime juice
1/2 red onion - mince
1 tomato - dice

Preparation: 
  1. Puree peas, rice vinegar, fresh herbs and water in blender.
  2. Mix together lime juice, mirin, balsamic vinegar and mashed avocados.
  3. Saute onion and mix together with diced tomatoes.
  4. Place pea puree in a bowl and add 1 dollop each of avocado mixture and grilled onion-tomato mixture.
